Onion soup, grilled mushrooms, camembert cheese and truffle oil.

Trucha curada del Valle de Uco, hinojo confit infusionado con bayas de enebro, quínoa en dos texturas, remolacha y sabayón de Geisha de Jade.

 Uco Valley cured trout, confited fennel infused with juniper, quinoa in two textures, beetroot and “Geisha de Jade” zabaione.

Provoleta de queso vacuno, suave crema de leche de cabra, tomates asados, pesto, higos, y crocante de aceitunas de la casa.

Caw milk Provoleta, goat milk cream suave, grilled tomatoes, pesto, figs and crunchy olives from our estate.

Mud oven braised piglet´s flank steak, pears and celery puree, pickled apples and cabbage, leeks and toasted hazelnuts.

1 - Los Inicios (1865)
Tomates frescos asados confitados sobre pan de masa madre tibio con jalea de higo, queso crema de cabra, brotes y aceite de pepita de uva.

Roasted tomatoes and tomato confit on warm sourdough bread with fig spread, goat cream cheese, sprouts and grape seed oil.

2 – Al rescate de tradiciones ancestrales (1900)

Trucha confitada, puré de peras y apio con arvejas y chauchas amarillas

Confited local trout on pear and celery puree, with green peas and yellow chaucha.

5 – Gaucho à la française (1980)
Ojo de Bife al hierro con ceniza de cebolla, vegetales escalibados y papas dauphine.

Onion ash coated Sirloin steak, vegetables preserve, roasted onions and dauphine potatoes.

6 – Frescura contemporánea (2018)
Frutos rojos, Savarín empapado en almíbar de gin de mandarinas y especias, yogurt helado casero y tierra de cacao.

Berries, tangerine infused gin and spices syrup submerged savarin, homemade frozen yogurt and cacao earth.
Served with the house´s digestive infusion

A piece of Argentinean wine history at La Cayetana

Making a long story short, Columbus brought the first seeds of Listan Prieto to the Americas. Soon this grape expanded both north and south. Called Mission grape in California, País in Chile and Perú, and Criolla in Argentina, this plus Muscat of Alexandria, pretty much completed the varietal stock.

 In Argentina, specially in Mendoza, french fine grapes did not exist until Monsieur Piaget, head of the first experimental vineyard and winemaking school, plus few advanced entrepreneur families started to plant them around mid 1800´s.  


Our Estate, originally a 168 acres vineyard completly planted by 1860, was the first one with french grapes in Maipú. It had its own winery, re-build in 1912. Today you can enjoy the original Manor house of this property.


Ver Sacrum wines tastings, as well as other garage projects can be enjoyed as well as paired lunches by Chef Pablo del Rio, that rescued and curated old recipies all with fresh ingredients locally produced.
